Lemon Crepes

Ingredients (12 Servings)
3/4 cup all-purpose flour
1/2 cup sugar
1/4 teaspoon salt
1 1/4 cups whole milk, room temperature
3 large eggs, room temperature...

1/2 tablespoon pure vanilla extract
6 tablespoons cold unsalted butter, melted, plus more, melted, for pan
Meyer Lemon Curd Mousse, recipe below
1/4 cup heavy cream, whipped
Candied Meyer Lemons, optional, recipe below

Instructions

STEP 1
Whisk together flour, sugar, and salt. Whisk together milk, eggs, and vanilla. Gradually pour milk mixture into flour mixture, whisking until smooth. Whisk in butter. Pour through a fine sieve into an airtight container; discard lumps. Refrigerate at least 2 hours or overnight.

STEP 2
Lightly coat a 6-inch crepe pan or nonstick skillet with butter. Heat over medium heat until just starting to smoke. Remove from heat; pour about 2 tablespoons batter into center. Swirl to cover bottom. Reduce heat to medium-low; return pan to heat. Cook until edges are golden and center is dry, about 30 seconds per side.

STEP 3
Slide crepe onto an overturned plate. Repeat with remaining batter, coating pan with butter as needed, and stacking crepes. Let cool.

STEP 4
Place 1 crepe on a flat serving dish. Spread about 1/4 cup lemon curd mousse onto crepe. Top with 1 crepe. Continue layering crepes and mousse. (Use 15 crepes, ending with a crepe on top.) Refrigerate until firm, about 1 hour.

STEP 5
Top crepe cake with whipped cream and 3 or 4 candied lemon slices.

Meyer Lemon Mousse
1 teaspoon unflavored gelatin (from one 1/4-ounce envelope)
1 tablespoon cold water
4 large eggs plus 6 large yolks
1 cup sugar
1 tablespoon plus 2 teaspoons finely grated Meyer lemon zest (from 2 lemons), plus 3/4 cup fresh Meyer lemon juice (from 5 to 6 lemons)
6 tablespoons cold unsalted butter, cut into small pieces
1 cup heavy cream, whipped

STEP 1
Sprinkle gelatin over water; let stand until softened, about 5 minutes.

STEP 2
Whisk together eggs and yolks in a heavy small saucepan. Whisk in sugar, lemon zest, and lemon juice. Cook, whisking constantly, over medium-low heat, until mixture is thick enough to coat the back of a wooden spoon, 8 to 10 minutes.

STEP 3
Remove pan from heat; add gelatin, stirring constantly, until gelatin dissolves and mixture is slightly cool. Add butter, a few pieces at a time, stirring after each addition, until smooth.

STEP 4
Strain through a fine sieve into a bowl, pressing with a rubber spatula to remove as much curd as possible; discard any undissolved bits of gelatin and egg. Press a piece of plastic wrap directly onto surface of curd to prevent a skin from forming, and refrigerate until set, at least 2 hours or overnight. Stir curd, and gently fold in whipped cream. Refrigerate for 1 hour. Stir before using.

Candied Meyer Lemons
1 cup sugar
1 cup water
2 Meyer Lemons (do not peel), washed well and sliced ¼” thick

STEP 1
Bring sugar and water to a boil in a large saucepan and heat until sugar dissolves. Add lemons and cover surface with parchment. Reduce heat to medium-low and simmer gently until rinds are translucent, about 30 minutes. Let lemons cool in syrup.

STEP 2
Using a slotted spoon, transfer lemons to a wire rack set over a rimmed baking sheet. Let stand to allow excess syrup to drip off.

Custard Base
1/4 cup Sugar
1 cup Heavy Whipping Cream
1 cup Whole Milk
3 Egg Yolks

Instructions

Cake
Preheat oven to 350 degrees F. Spray 2 9-inch cake rounds.  In a stand mixer fitted with a whisk attachment, combine flour, sugar, cocoa powder, baking soda, and salt. Whisk well to combine. Add the oil and sour cream and whisk to blend. Gradually beat in water, vinegar, and vanilla. Whisk in the eggs and continue to beat until well blended. Scrape down the sides of the bowl and be sure batter is completely mixed. Divide between prepared pans.  Bake 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.

Frosting
Combine cocoa and boiling water, stirring until cocoa powder has dissolved. Set aside.  In a stand mixer fitted with a paddle attachment, beat butter, powdered sugar, and salt on medium-high speed until pale and fluffy. Reduce speed to low. Add melted and cooled chocolate chips, scraping down sides of bowl as needed. Beat in cocoa powder-water mixture until frosting is smooth.

Caramel
Heat sugar in a dry skillet over medium-high heat, stirring to heat evenly until sugar melts and turns dark amber. Add cream a small amount at a time, whisking continuously until caramel dissolves. Mixture will spatter. Strain carmel through a mesh seive into a bowl. Whisk in salt and vanilla. Set aside.

Custard
Bring milk, cream, and sugar just to a boil in a heavy sauce pan, stirring occasionally. Lightly whisk egg yolks in a medium bowl. Add half the hot milk mixture to the yolks in a slow stream, whisking constantly. Pour back into the sauce pan. Cut into wedges and serve warm or at room temperature.

    Cheesy Bacon Ranch Bread

    Ingredients
1 round loaf of sourdough (or similar) bread
    2 cups shredded cheddar cheese
1/2 cup-3/4 cup chopped cooked bacon
    1/2 cup butter, melted
1 tbsp. dry ranch dressing mix
    Instructions...
Preheat oven to 350F degrees. Using a sharp bread knife,
cut the bread going in both directions but don't cut all the way through the bottom. Place your bread on a large piece of aluminum foil (this will make it easier to wrap it up later). Place shredded cheese in between the slices. Really pack it in there as best you can. This part takes the longest amount of time in this recipe so be patient. This is also why you wouldn't want to use a really soft bread or else it would tear too easily why you packed the cheese in. Now add in bacon (as little or as much as you like). Do your best to get in between the slices. Now take 1 tbsp. dry ranch dressing mix and add it to the melted butter. You can add more dry mix if you like a stronger ranch taste. Give it all a good stir until combined. Pour or spoon the butter mixture over top of the bread. Now wrap the whole thing up in aluminum foil and place on baking sheet. Bake at 350F degrees for 15 minutes. Unwrap from the foil and bake for another 10 minutes (or until the cheese is melted). And then dig in while warm!

    Chicken Pizzaiola

    Ingredients (6 servings)
    Sauce
    {substitute 1 jar (24 ounce) premade sauce to save time}
    2 tablespoons olive oil
    1 medium-ish yellow onion, diced
    1/2 bell pepper, diced
    4 cloves garlic, minced
1 1/2 teaspoons Italian seasoning, crushed between fingertips...

coarse salt and fresh black pepper
1 can (28 ounces) crushed tomatoes
    Chicken
1/3 cup grated Parmesan cheese, plus more for serving
    1/3 cup seasoned bread crumbs
    6 chicken cutlets
    1 + 1/3 cups shredded mozzarella cheese
    3 - 4 ounces sliced pepperoni
    12 ounces spaghetti

    Instructions
    Make the sauce
In a large, heavy-bottomed saucepan heat the oil over medium-low heat. Add the onion, pepper, garlic and Italian seasoning. Season well with salt and pepper. Cook until tender about 10 minutes, stirring often. Mix in the crushed tomatoes, about 1 teaspoon salt and 1/4 teaspoon black pepper. Add about 1/4 cup water to the empty tomato can and slosh it around to mix with any remaining sauce and add it to the pan. Bring to a simmer and cook 25 - 30 minutes, stirring often. Taste halfway through and again at the end and season as needed.

    Make the chicken
Heat oven to 400 degrees F. Lightly grease a large roasting pan or baking sheet with sides large enough to comfortably fit all the chicken. In a wide, shallow dish mix the Parmesan and bread crumbs together. Season the chicken on both sides with salt and pepper. Coat the chicken one at a time with the crumbs patting them on with your hands - the chicken will be thinly covered - some of the chicken will show through - that's ok. Place them on the baking sheet at least an inch apart. Bake 15 minutes.

Meanwhile cook the spaghetti in plenty of boiling water according to package directions to al dente. Reserve 1/2 cup of the cooking water before draining. Remove the chicken from the oven and top with the pepperoni - dividing it up evenly between the chicken, then do the same with the mozzarella, piling it on top.

Put them back in the oven about 5 minutes until cheese is completely melted. Chicken should measure internal temperature of 165 - 175 degrees F. If you want the cheese to be golden you can place them briefly under the broiler.

Mix the sauce into the spaghetti over low heat, mixing in a little of the reserved starchy water from cooking the spaghetti. Serve with the chicken and extra Parmesan for garnish.
