Roasted Shrimp & Broccoli

2# Broccoli, cut up
1 T Olive Oil
1 T Butter
4 Cloves Garlic, minced
1/2 t Fennel Seed, crushed {optional}
1 t Salt...

1/2 t Pepper
1/4 t Cayenne Powder {optional}
1 Pound Large Shrimp, shelled and deveined
1 T Olive Oil
1 T Butter
Lemon Zest from one Lemon
2 cloves Garlic crushed
1/2 t Salt
1/2 t Pepper
Chives
Heat the oven to 425.  On a large cookie sheet, toss together broccoli, olive oil, Butter, garlic, Fennel Seed, salt, pepper and cayenne pepper. Spread into a single layer and pop into the oven for 10 minutes.

Meanwhile, toss together the shrimp, olive oil, Butter, lemon zest, garlic, salt and pepper in a bowl.
When the broccoli’s been in the oven 10 minutes, add the shrimp to the broccoli and toss.

Roast another 10-15 minutes, tossing once halfway through, until the broccoli is tender and golden around the edges.

Garnish with chives

    This sounds absolutely delish! We have a great market nearby and I am able to get really fresh seafood. We usually have shrimp about once a month, so I am going to pin this recipe!
