LEMON SCONES
2c flour
1/4c sugar
1t baking powder
1t baking soda
1/4t salt
1/2c cold butter
1/2c sour milk [1 1/2T vinegar and fill with milk to 1/2c]
1 1/2t lemon peel grated
Additional sugar
In bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles fine crumbs. Add milk and lemon peel, stirring just til mixed. Turn onto a floured surface; knead gently six times. Shape into a ball. On a greased baking sheet, pat dough into a circle about ½” thick and 8 ½” in diameter. Using a sharp knife, cut wedges in the dough, but not all the way through. Sprinkle with sugar. Bake at 350° for 20-25 minutes or until edges are lightly browned. 10-12 scones
Icing: 1/2c powdered sugar – 2T grated lemon rind – 1 1/2t lemon juice – 1 1 /2t milk…combine and drizzle over
